Classic Vanilla Cupcake Recipe from Scratch for Pokemon Cupcakes

Here's the classic vanilla white cupcakes that will give you your basic recipe for Pokemon (or other kid's birthday) cup cakes.

Ingredients

• 2 cups flour
• 1 1/2 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 4 egg whites from large eggs
• 1/2 cup shortening
• 1 cup 2% milk
• 2 large eggs
• 1 1/2 teaspoon vanilla


Directions
Preheat oven to 350 degrees. While the oven heats up, put cupcake liners in your cupcake pans. For Pokeball cupcakes use red or white liners, for Pikachu cupcakes use yellow.

Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large bowl. Mix at low speed for 2 1/2 minutes. Scrape bowl to make sure everything was mixed and then add egg whites. Mix again at high speed for about 2 minutes. You want your cupcake batter to be fluffy and without lumps.

Fill liners 1/2 to 2/3 full of cupcake batter. Bake 20 to 25 minutes. Test to see if they are done by inserting toothpick in the center to see if it comes out clean.

Cool 15 minutes in pans then remove from pan, and place on wire racks to cool completely. The cup cakes must be completely cooled before you frost or the cake will rip.

Frost and decorate your cupcakes as desired.
